Couper en gros morceaux pour mixer avec l\u2019\u00e9chalote et l\u2019ail. Ajouter l\u2019huile d\u2019olive, le jus de citron, sel et poivre. Mixer \u00e0 nouveau, ajouter la cr\u00e8me et donner un dernier coup de mixer. Pr\u00e9voir des cubes de concombre pour la finition, et quelques feuilles de cerfeuil.
